Homemade Granola with Maple and Pecans

If you love maple, and you love pecans, you’re absolutely going to enjoy this homemade granola with maple and pecans. Enjoy this granola solo or use it as a topping for parfaits, yogurt bowls, or oatmeal.

A Healthy Homemade Granola Recipe

This granola is ridiculously easy to make, and all the ingredients are healthy! I usually have everything I need to make granola already stocked in my pantry. The only thing here that’s not usual is maple extract, I don’t know if you can find that at any store. I bought some online a while back and had it lying around in the back of my pantry. Other than that, you just need:

  • Organic Maple Syrup
  • Pecans
  • Rolled Oats
  • Chia Seeds
  • Cinnamon
  • Salt
  • Maple Extract
  • Vanilla Extract
  • Coconut Oil

Making this Simple Recipe for Granola

I have a few tips to make this recipe perfectly. First, mix all of the dry ingredients and wet ingredients separately. Then, combine the wet and dry ingredients. This helps get the mixture more even.

My second tip is all about how to get those big, beautiful, chunky granola pieces. I love big granola chunks, I mean, who doesn’t. Before placing the granola in the oven, use your fingers to press down on the granola, making the oat pieces stick together. Skip the stirring halfway through too. Just rotate the pan halfway for even baking. Then, let the granola cool completely before touching it. This gives time for all the hot sugars to solidify, helping to form those big chunky pieces.

This Granola is Gluten-Free and Vegan!

Not all oats are certified gluten-free. To make this recipe gluten-free, make sure you are using certified gluten-free oats. I loved using the gluten-free rolled oats from trader joes.

If gluten-free isn’t a priority for you, try out using thick rolled oats to make granola! I think the thicker rolled oats result in crunchier granola.

Ingredients

Scale
  • 3 Cups Rolled Oats
  • 2 Tablespoons Chia Seeds
  • 1 Teaspoon Cinnamon
  • 1/2 Teaspoon Salt
  • 1 Cup Pecans, Chopped
  • 1/2 Cup Maple Syrup
  • 2 Tablespoons Coconut Oil, melted
  • 1/2 Teaspoon Maple Extract
  • 1 Teaspoon Vanilla Extract

Instructions

  1. Line a shallow baking pan with parchment paper and preheat your oven to 325° F.
  2. Mix the dry ingredients in a bowl, then mix the wet ingredients in a separate bowl.
  3. Fold the dry ingredients into the wet ingredients, and mix until everything is evenly combined.
  4. Spread the granola mixture out on the parchment paper-lined pan, evenly.
  5. Bake at 325° F for 40 minutes. Rotate the pan and stir the granola halfway through for even baking. Don’t stir so much that the granola breaks apart. 

Notes

    • I don’t suggest instant oats for this recipe, the GF rolled oats from Trader Joe’s work great.
