Dill Pickle Chicken Salad Meal Prep

If you’re anything like me in the summer, you’re always looking for quick, protein-packed, cool lunches that aren’t totally boring. This Dill Pickle Chicken Salad is what you’ve been looking for! I always make rotisserie chicken salad, but you can use other cooked chicken in this recipe, too.

It’s the perfect cool lunch meal prep for any warm day. You can change it up with how you serve it, too! Scoop it onto crackers with some fruits and berries on the side. Or pile it on a slice of toasted sourdough bread.

Helpful Notes on Ingredients

Chicken: Rotisserie chicken is a great option for convenience and flavor. I recommend avoiding smoked rotisserie or BBQ rotisserie for this recipe, though. Unless that’s your vibe, I just don’t love smoky and BBQ flavor in this recipe. If you try it with one of those, let me know in the comments how you like it. You can also use any other kind of plain, shredded cooked chicken or canned chicken.

Dill pickles: aka the whole point of this chicken salad! You must try this with homemade fermented pickles! My favorites to use are my horseradish dill pickles or honey mustard pickles. If you need to go with store-bought, though, that’s totally fine! For store-bought options, I recommend using refrigerated deli-style pickles like Grillo’s or Bubbies.

Yes, Mayo AND Eggs: I like my chicken salad to have a rich, creamy texture, but also a nice, substantial texture. So I use both mayonnaise and chopped hard-boiled eggs. I also throw in some Greek yogurt, because why not?

How to Meal Prep Dill Pickle Chicken Salad

For easy meal prep, this chicken salad keeps in the fridge for 5 days. I recommend prepping the chicken salad, storing it in an airtight container in the fridge, and serving it in various ways to keep it fresh and fun. My favorite ways to serve chicken salad:

  • croissant with salt and vinegar potato chips
  • crackers with berries and fruit on the side
  • lettuce cups
  • toasted sourdough

Is This Dill Pickle Chicken Salad Good for Gut Health?

I think the answer is yes! Since I always use my homemade, naturally fermented dill pickles and my Instant Pot yogurt, this chicken salad has tons of probiotics. So I like to think of the chicken salad as the protein + probiotics, and the bread, crackers, or whatever you serve with it is an opportunity for prebiotic fiber.

This chicken salad is great for gut health, but it really depends on how you serve it. My favorite way to serve is making a sandwich on toasted whole-grain sourdough. But a close second is a croissant. A toasted whole-grain sourdough sammie will obviously be a bit more gut-healthy than a buttery croissant. I always say enjoying your food is a huge part of gut health, though, so don’t forget to enjoy a croissant if you want!

Dill Pickle Chicken Salad Meal Prep

Ingredients

  • 3 cups cooked chicken, chopped (I use rotisserie)
  • 2 eggs, boiled and peeled
  • 1/3 cup mayonnaise
  • 1/4 cup thick Greek yogurt
  • 1 cup fermented pickles, drained and chopped
  • 2 tablespoons shallot, minced
  • 1 tablespoon mustard
  • 1 tablespoon honey
  • 1 tsp dried dill
  • 1/2 tsp garlic powder

Instructions

  1. Add all the ingredients to a large bowl and mix until evenly combined.
  2. Serve with crackers, on toast, as a sandwich, in a lettuce wrap, or with fresh vegetables.
  3. Store in an airtight container in the refrigerator for up to five days.

  • I use Primal Kitchen avocado oil mayo and Grey Poupon dijon mustard.
  • You can use any cooked chicken in this recipe. I recommend sticking to a plain flavor

    I found this recipe while looking for ways to use up my egg surplus. This is delicious! I’m eating it on crackers as I type this lol. My favorite thing is that I can eat it different ways, so I’m less likely to get bored with it over the next few days. I used canned chicken and added extra salt and pepper since the chicken wasn’t already seasoned like rotisserie chicken. Well worth making!
