Dill Pickle Chicken Salad Meal Prep

Are you ready for a not-boring lunch meal prep this summer? Then try my dill pickle chicken salad recipe! It’s made with fermented dill pickles for the best flavor and probiotic benefits.

Ingredients

  • 3 cups cooked chicken, chopped (I use rotisserie)
  • 2 eggs, boiled and peeled
  • 1/3 cup mayonnaise
  • 1/4 cup thick Greek yogurt
  • 1 cup fermented pickles, drained and chopped
  • 2 tablespoons shallot, minced
  • 1 tablespoon mustard
  • 1 tablespoon honey
  • 1 tsp dried dill
  • 1/2 tsp garlic powder

Instructions

  1. Add all the ingredients to a large bowl and mix until evenly combined.
  2. Serve with crackers, on toast, as a sandwich, in a lettuce wrap, or with fresh vegetables.
  3. Store in an airtight container in the refrigerator for up to five days.

Notes

  • I use Primal Kitchen avocado oil mayo and Grey Poupon dijon mustard.
  • You can use any cooked chicken in this recipe. I recommend sticking to a plain flavor
