Making Honey Greek Yogurt Ice Cream

I based these honey Greek yogurt ice cream bars on my cottage cheese ice cream recipe. The only difference is that I used thick Greek Yogurt instead of cottage cheese.

High-Protein Greek Yogurt Ice Cream Bars

I always have chocolate caramel LMNT in my pantry because it’s part of my bedtime routine. I dissolve a packet in hot water, add a splash of milk, and drink it like hot chocolate before bed. My sleep is better when I drink my electrolytes before bed, too. And there is a good reason for that!

Quality sleep is critical to looking, feeling, and performing your best. Magnesium increases GABA, a neurotransmitter known for producing calming effects. Consuming adequate sodium can also help you sleep through the night because low sodium levels increase cortisol and adrenaline.

Now that it is June in Louisiana, and it’s so hot, even at night, I decided to create a cold bedtime snack with electrolytes and protein. One night, I tried mixing some chocolate caramel LMNT with Greek yogurt and honey for a snack, and it was delicious! I immediately decided it should be a Greek yogurt ice cream flavor, so this recipe was born.

LMNT makes two different chocolate electrolytes that I love! They have plain chocolate and chocolate caramel. The chocolate caramel is my favorite, but you can use either one in this recipe.

Honey Greek Yogurt with Chocolate LMNT Electrolytes

What are electrolytes? Electrolytes are minerals in your body that have an electric charge, such as sodium, potassium, calcium, and magnesium. These minerals are essential for various bodily functions, including nerve function, muscle contraction, and fluid balance.

I use LMNT electrolytes daily, formulated with a science-backed electrolyte ratio of 1000 mg of sodium, 200 mg of potassium, and 60 mg of magnesium. The main reason I supplement my electrolytes is for gut health. Electrolyte balance is essential for optimal gut health, so getting a dose of balanced electrolytes with fermented foods and drinks is a win-win situation.

The process is almost too easy. First, Add all the ingredients to a blender. Then, blend until smooth, scraping down the sides and blending again if necessary. Last, pour the mixture into your popsicle mold and freeze. See, it’s too easy!

Supplies You Need to Make Yogurt Ice Cream Bars

Here are the ingredients and equipment you will need to make it:

  • 3 cups of skyr or Greek yogurt (thicker is best; I use strained homemade yogurt or Fage 0%)
  • 1/2 cup raw honey
  • 2 packets chocolate caramel LMNT (or plain chocolate LMNT)
  • Dark chocolate chips (for melting)
  • blender or food processor
  • popsicle mold
  • popsicle sticks (I have reusable ones)
  • glass bowl or jar for melting chocolate

The Health Benefits of Greek Yogurt Ice Cream (with Electrolytes!)

Greek yogurt is particularly rich in electrolytes like calcium and potassium. Calcium is crucial for bone health and muscle function, while potassium helps regulate fluid balance, muscle contractions, and nerve signals.

When you consume Greek yogurt, you get protein and probiotics and replenish some of the essential electrolytes your body needs to function correctly. When you add LMNT electrolytes to the yogurt, things are even healthier!

Here are some of my favorite health benefits that the Chocolate Caramel LMNT adds to this nourishing, probiotic snack:

Chocolate and Honey Greek Yogurt Ice Cream Bars

These chocolate and honey Greek yogurt ice cream bars are the perfect summer snack or dessert! They’re made with high-protein, low-fat Greek yogurt, honey, and chocolate caramel LMNT electrolytes. Then, they’re drizzled or dipped in rich dark chocolate.

  • Prep: 10 minutes

Ingredients

  • 3 cups of low-fat Greek yogurt or Skyr*
  • 1/2 cup honey
  • 2 packets chocolate caramel LMNT
  • Dark chocolate chips (for melting)

Instructions

  1. Add yogurt, honey, and chocolate caramel LMNT to a food processor or high-powered blender and blend until smooth and creamy.
  2. Pour the mixture into the popsicle mold. Place the popsicle sticks in each slot and freeze for about 8 hours or until completely frozen.
  3. Once frozen, melt the dark chocolate chips.
  4. Line a pan with parchment paper, and pop the ice cream bars out of the popsicle mold.
  5. Drizzle the chocolate over the ice cream bars. You can also dip them in melted chocolate to completely coat them.
  6. The chocolate should start hardening immediately, and you can place the bars on the parchment paper lined pan.
  7. Once all the ice cream bars have chocolate drizzle or dips, place the pan in the freezer for about 30 minutes so the chocolate can completely harden.
  8. Enjoy! (They might get a little messy as they melt, so eat over a small plate or give them to kids to take outside!)

Notes

  • The thicker the yogurt, the better. I like to use Fage total 0% fat or strained homemade yogurt for this recipe. The nutrition facts are calculated using 0% fat Greek yogurt.
  • You can add 2 scoops of protein powder before blending to increase the protein content.
  • Plain chocolate LMNT works excellently in this recipe, too.

I only like to learn fermentation from two places: from knowing the microbes and from cultural recipes passed down in families.

I originally learned how to make kvass from a Russian food blogger, named Peter. @petersfoodadventures He grew up drinking beet kvass made by his grandfather. It doesn’t get more historically/culturally accurate than that

After learning from Peter’s blog, I developed my golden beet kvass recipe, with some slight variations of my own and a secondary fermentation to carbonate it. (Peter is credited and linked in the recipe blog too, so you can check out his original beet kvass recipe!)

Anyways, beet kvass is a delicious, sweet, bubbly beverage, not a salty lacto-ferment 🤗🫧✨

People in Blue Zones , particularly in Mediterranean regions, often drink 1-2 glasses of wine daily with meals and among friends, enjoying organic wines rich in antioxidants. 

This contrasts with new studies that show “no safe level of alcohol.” These new studies lump together all types of alcohol (including hard liquor) consumed in unhealthy ways, without distinction of specific lifestyle and beverage consumption environment.

I think context is key. Wine is not necessarily a reason for longevity in Blue Zones, but it is a small, supportive component of a larger lifestyle that includes a fiber-rich diet, regular physical activity, strong social connections, and a sense of purpose. Consumption is limited to about 1-2 glasses per day and is almost always enjoyed with food and in the company of friends and family. 

This turns wine into a ritual that promotes social bonds. Not a toxic coping mechanism.

And type of alcohol does matter. Many Blue Zone populations, especially in the Mediterranean, drink natural, organic, or locally grown and brewed wines, which have a much higher antioxidant content and a lower sugar, pesticide, and additive content. 

Because of all of this, I think more nuance is needed in the alcohol conversation.
