Strawberry Milk Kefir Overnight Oats

These blended strawberry milk kefir overnight oats have a creamy, smooth consistency and are super easy to make. Just add everything to your blender, refrigerate overnight, then enjoy for breakfast the next morning! Protein was the star of nutrition talk last year, and this year, I’m happy to see that fiber is having a moment, too. One serving of these oats provides 28% of the standard daily recommended amount of fiber!

Blended Strawberry Overnight Oats

I think blended overnight oats are simply better than non-blended. I do love regular overnight oats too, but it’s a texture preference thing. Blended overnight oats are creamy and smooth, with a pudding-like texture. I like to blend everything in a high-powered blender, like a Vitamix. Alternatively, you can use an immersion blender.

Are Milk Kefir Overnight Oats Fermented?

Yes! Even though we store them in the fridge, the milk kefir microbes ferment the oats a bit, making them even better for gut health and easier to digest. Fermentation still happens at refrigeration temperature; it’s just slower. Think of it kind of like when you put sourdough in the fridge overnight for an overnight proof. It still ferments and becomes even easier to digest.

Store-bought milk kefir works great in this recipe. But y’all know I love my homemade ferments. So try your hand at making some milk kefir at home! It’s one of the big money savers when you DIY.

Strawberry Overnight Oats Meal Prep

This recipe is perfect for meal prepping! At 1x, this recipe makes four servings. Overnight oats are kind of naturally meal-prep, since we store them in the fridge. So the recipe is already written with meal prepping in mind.

I don’t love eating out of a jar, so I like to dump one serving into a bowl and top it with more strawberries or blueberries. Any fruit would be great, honestly. I also like to add a little drizzle of lemon honey. Directions for making that are in the recipe notes! I just love how lemon brings out the strawberry flavor.

Blended Strawberry Milk Kefir Overnight Oats

To make strawberry milk kefir overnight oats just add everything to your blender, refrigerate overnight, then enjoy for breakfast the next morning!

Ingredients

  • 2 cups fresh or frozen strawberry halves
  • 1 1/2 cups milk kefir
  • 1/2 cup water
  • 2 tablespoons organic maple syrup
  • 1 teaspoon vanilla extract
  • 1/8 tsp salt
  • 2 cups quick-cooking or rolled oats*
  • 2 tablespoons flaxseeds
  • Topping suggestions: more fresh strawberries, nut butter, hemp seeds, lemon honey*

Instructions

  1. Using a mixing bowl and immersion blender or a high speed blender, blend everything except the toppings.
  2. Let sit for at least 5 minutes, to allow the oats and flax seeds to absorb some of the liquid. Then, stir or blend again to incorporate any extra liquid sitting on top.
  3. Transfer the blended oatmeal to individual portioned jars or containers (this makes 4 servings at 1x), and store in the fridge overnight.
  4. To serve, pour into a bowl and top with any fixings you love; keep in the fridge for up to 6 days. If you love this easy recipe, please leave a 5-star review below! 

Notes

  • Non-dairy option: I recommend using a thick and creamy vegan milk, like cashew, oat, or soy milk instead of water and use non-dairy yogurt in place of of milk kefir.
  • For a protein boost: add 1 scoop of vanilla protein powder before blended. If your protein powder is sweet, you can reduce the maple syrup.
  • To make lemon honey for drizzling: combine 1/4 cup honey and 2 tablespoons lemon juice.

I really do think my gut is loving this sauerkraut because of the celeriac (celery root), and I don’t have a science based reason for why. I saw this celery root in the store and had a gut feeling that I should make sauerkraut with it, and that’s how we got here. I guess my microbiome knew what it wanted!

A lot of people think vinegar kills all microbes b A lot of people think vinegar kills all microbes because shelf stable pickles do not contain microbes. But with shelf stable pickles, it’s the pasteurization/sterilization via hot water bath or pressure canning that makes shelf stable pickles free of microbes.

Hot hot hot acid in a pressurized environment does kill, well…most microbes. 

Think about “refrigerator pickle” recipes, though. They need to be stored in the refrigerator because vinegar alone doesn’t stop fermentation.

Fridge pickles are made without pasteurization/sterilization (canning) so they will wild ferment without refrigeration, and not necessarily in a good way because there’s not enough salt. 

All vinegar is made via fermentation too, and vinegar fermentation involves acetic acid bacteria, but also a ton of LAB, mainly Lactobacillus, Pediococcus, and Leuconostoc (the same genera you’d find in fermented veg.)  I linked a reference paper in my fermented mushroom recipe blog, so you all can read about the LAB involved in vinegar fermentation.

I will not ever wild lacto ferment just beets agai I will not ever wild lacto ferment just beets again lol. Mixing with cabbage for beet sauerkraut is the best though! 

“Lacto fermented beets” was the first ferment I tried to make after learning sauerkraut in college. My best friend Sidney came over and we used these gorgeous beets from the farmers market, with 2.5% salt, and some spices. Well, it ended up tasting like beet moonshine and it was just… not good.

But it was a conduit for learning. Those beets were my first lesson in how different sugars and growth in the rhizosphere vs the phyllosphere influences fermentation. 

Cabbage and the cabbage microbiome offer a lot to balance out beets in fermentation, and I think mixing into a sauerkraut is the only way to go for lacto fermenting beets!

My Roasted Butternut Squash Hot Sauce recipe is free on my website! I didn’t cook this one, so yes it’s still probiotic.

When lactic acid bacteria ferment the starches in winter squash, they naturally convert them into emulsifying compounds called exopolysaccharides. So when we blend our hot sauce after fermentation, there’s no watery separation in the bottle. Roasting the squash with the garlic for the recipes also adds such good flavor! 

Definitely make sure it’s fully fermented and not bubbling anymore before you blend and bottle. Otherwise, it’ll carbonate in the cute little hot sauce bottles.
