Easy and Quick Dinner Rolls

Honestly, this recipe was weird for me. I’m so used to making sourdough and the process taking nearly two days. I went from mixing to baking these rolls in just two hours! It was awesome. I love sourdough, but baking with active dry yeast also has its perks! If you are looking to easily and quickly make dinner rolls, this is the recipe for you. These dinner rolls are still considered fermented, just not long-fermented with bacteria in the mix too, like sourdough.

Sweet Potato Bread Rolls

I enjoyed creating this recipe! Baking bread with sweet potato incorporated is fun. I find that the result from adding potato is a lighter, fluffier bread! Who doesn’t love that? I think making these with any type of potato would be delicious. For your results to be the exact same as mine, you need to use sweet potato though. It can be purple or orange. Using purple sweet potato is really fun and colorful.

These rolls are perfect for Thanksgiving or Christmas Dinner. I made these rolls for Jon and myself on Thanksgiving, and we made little thanksgiving dinner sliders with them. I marinated some tempeh, then grilled it. We had roasted green beans and cranberry sauce too. Surprisingly, it was a delicious meal.

How to Make these Soft and Buttery Sweet Potato Rolls for Dinner

If you have a mixer with a dough hook, that will work great, but don’t have one. I use my bread machine, and I use the easy dough setting. I let it knead the dough, then I remove it before the rise portion of the dough setting begins. The rest of the process happens at room temperature.

Ingredients

  • 2 cups sweet potato, cooked
  • 1 cup warm milk
  • 4 tablespoons melted butter
  • 2 eggs, lightly beaten
  • 3 tablespoons maple syrup
  • 7 grams active dry yeast
  • 2 teaspoons salt
  • 5 cups bread flour

Egg Wash

  • 1 egg
  • 1 tablespoon water
  • flake salt

Instructions

  1. In a large bowl, combine the milk, butter, sweet potato, eggs, maple syrup, and yeast.
  2. Add in the salt and two cups of bread flour and mix until a shaggy and loose dough ball forms.
  3. Add in the remaining flour and knead until it’s a uniform smooth dough ball. (I do this with my bread machine, but you can also knead by hand or with a stand mixer. 
  4. Rub a bit of olive oil on the inside of a clean bowl, and place the dough ball in the bowl to rise for 45 minutes at room temperature. Cover the bowl with plastic wrap or reusable beeswax wrap. 
  5. Line a 13×9 inch baking pan with parchment paper.
  6. Gently press down the dough.
  7. On a floured surface and with floured hands, divide the dough into 15 equal pieces.
  8. Roll each piece into a dough ball and place it on the parchment paper-lined pan.
  9. Combine the egg and water for the egg wash. 
  10. Baste the rolls with egg wash and sprinkle with flake salt.
  11. Cover the rolls with plastic wrap and allow the rolls enough time to rise so that they double in size. While you wait, preheat your oven to 375° F.
  12. Remove the plastic wrap and bake the rolls for about 20 minutes, until golden brown.

Notes

  • For vegan rolls sub the egg with any vegan egg substitute, and the milk and butter for vegan alternatives
  • To cook a sweet potato, poke it all over with a knife. Then rinse with water and place in the microwave for 5 minutes. Rotate and cook for another 5 minutes. The potato is done when it’s soft, mashable and the skin is easily removed.
