Vegan Nachos with the Best Vegan Queso Recipe

In honor of the launch of our Fermented Jalapenos, we made vegan nachos with vegan queso! I love this vegan queso recipe. This is the creamiest, cheesiest, most delicious vegan cheese sauce around. It’s perfect for vegan nachos.

The Best Vegan Queso Ingredients

There are a lot of vegan queso recipes. Ingredients range from sweet potatoes to almonds. This recipe is pretty simple though. If you’re soy-free, apologies this recipe isn’t for you. For my vegan queso, I use two main ingredients plus some spices and seasoning. You’ll need a block of sprouted tofu, 1 cup of raw cashews and 1/2 cup of fermented vegetable brine for the bulk of it.

Fermented Vegetable Brine In Vegan Queso

I use fermented vegetable brine in my vegan queso. Since real cheese is fermented with similar microorganisms, adding in fermented vegetable brine as the liquid component imparts a real cheesy flavor. I like using our Cultured Guru Kimchi brine for this, but you can use the liquid brine from sauerkraut too. When fermented vegetable brine is combined with the creaminess of tofu and the flavor of nutritional yeast, it’s so close to cheese it’s unbelievable.

Depending on what type of fermented vegetable brine you choose to use in this recipe, you can go for a spicy flavor profile or a milder cheesy flavor. I like spicy queso, so I use our kimchi brine and I like to add in a little bit of Cholula hot sauce for extra spice. This is, of course, completely optional. You can also use the liquid brine from our new Fermented Jalapeños for this recipe.

Other Ways to Enjoy Vegan Queso

I like to use this cheese sauce in quesadillas, on tacos, on tater tots, and for a pretzel dipping sauce! Yum! This queso is pretty versatile. You can even use it on a veggie burger, or to make mac and cheese.

Vegan Nachos

Vegan nachos are not complicated. Once you get the queso cheese sauce made, you just need black beans, Fermented Jalapenos, diced tomatoes, and cilantro. The toppings in this recipe are easily adjusted too. Use whatever type of bean you have. Besides black beans, I like to use pinto beans and chickpeas. You can also add guacamole! I wanted to add some guac to this recipe, but we didn’t have any avocados when we photographed this blog. The nachos were still amazing though.

Ingredients

Scale
  • Yellow Corn Tortilla Chips
  • 1 Can Black Beans, Drained and Rinsed
  • 1/4 Cup Chopped Cilantro
  • 1/2 Cup Diced Tomatoes
  • 1/4 Cup Cultured Guru Fermented Jalapeños

For the Vegan Queso

  • 1 Block Sprouted Frim Tofu
  • 1 Cup Cashews, Soaked and drained
  • 1/4 Cup Kimchi Brine
  • 1 Cup Water
  • 1 Teaspoon salt
  • 1/2 Teaspoon Smoked Paprika
  • 1 Teaspoon Turmeric 
  • 2 Teaspoons Garlic Powder
  • 2 Tablespoons Nutritional Yeast
  • 2 Tablespoons Tapioca Starch

Instructions

  1. In a blender, add all of the ingredients for the vegan queso. Blend on high until smooth. 
  2. Add the blended queso ingredients to a saucepan and heat over medium heat. Stir continuously until the queso starts to bubble and becomes smooth and slightly stringy. You may have some clumping, but keep stirring and it should become smooth again. 
  3. Remove from heat. 
  4. Add the corn chips to a plate, and pour the hot queso over the chips. 
  5. Top the nachos with black beans, Cultured Guru Fermented Jalapeños, cilantro and diced tomatoes. 

Notes

* To soak cashews, add the cashews to a bowl of boiling hot water for 20 minutes. Then drain off any excess water.

*You can sub the kimchi brine for fermented Jalapeno brine. For less spicy queso, sub the kimchi brine for sauerkraut brine. 

*If you do not have tapioca starch, you can leave it out. This ingredient just gives the cheese a stretchy, gooey cheese texture.
