This is grilled corn and summer squash pasta salad is perfect for late summer, when we’re all looking for yet another thing to do with zucchini that isn’t boring.

I obviously put fermented pickles in the salad + I always make my probiotic sun dried tomato vinaigrette dressing to go with it.

PSA: all fermentation pellicles are SCOBYs but not all SCOBYs are pellicles. In other words, SCOBY can come from the kombucha liquid, or the pellicle, or both. There’s no one right option, just vibes. I usually like to use both.

These big pitchers I have are 2 gallon size and I got them from target six years ago. I use one to hold all my extra SCOBY pellicles and brew kombucha vinegar with them, and the other one is for brewing kombucha to drink.

To culture my fresh batch of kombucha, this time I just dispensed some liquid from all the extra SCOBYs into my fresh batch.

You can use green tea, black tea or both. You can use organic sugar or honey or both. Again, there’s no one right way.

In my brewing experience, temperature isn’t a huge deal as long as it’s not extreme. I’ve had success brewing anywhere from 65F to 80F. It just ferments faster when it’s warmer and slower when it’s cooler.
