Ingredients
2 large peaches, chopped
2 cups cherry tomatoes, cut in half
burrata
3 cups Tuscan kale, chopped
2 cups snow peas
1 cup celery, chopped
1/4 cup red wine vinegar
1/4 cup extra virgin olive oil
cracked black pepper
sea salt
4 tablespoons pesto
Instructions
Bring a pot of water to a boil and blanch the snow peas and kale for 2 minutes, then drain and rinse with cold water.
In a large bowl, combine the peaches, cherry tomatoes, kale, snow peas, and celery.
In a separate small bowl, whisk together the red wine vinegar, extra virgin olive oil, salt, and black pepper to create the dressing.
Drizzle the dressing over the salad mixture and toss gently to combine.
Transfer the salad to a serving platter.
Carefully tear the burrata cheese into small pieces and distribute them evenly over the salad.
Drizzle the pesto over the top for an added burst of flavor.
