Ultimate Probiotic Veggie Sandwich

Vegan + Probiotic + Prebiotic 

Let us start out with an exploration of my relationship with pickles. Anyone ever notice how our recipes aren't exactly fair to our pickles? As in... I don't ever have recipes or Instagram posts incorporating them. Well that's because I'm not a huge pickle fan. Scotty LOVES pickles, and I love fermenting them. I've just never been a huge pickle eater. I have to say though, every time I eat one of our Cultured Guru Wild Fermented Dill Pickles I'm kind of impressed. Not to toot my own horn, but they're pretty darn delicious. It's just when I open my fridge I'm more drawn to sauerkraut and kimchi, and I'm not out to pretend that I eat pickles everyday.

 If our three fermented products (kimchi, kraut and pickles) were our children, I think pickles would be the middle child... You know the one that feels left out and forgotten. I do love our pickles though, and if I were to eat pickles often I would only choose ours because they are the only pickles I've ever actually enjoyed. 

Anyways, to the point. The only time I eat our pickles is with snack trays, on sandwiches or on veggie burgers. I felt that our blog was due for a fun new pickle recipe, and so naturally I made a new kind of sandwich. I also don't eat that many sandwiches, I'm more of a big bowl of vegetables kind of girl. But I mean, WOW this sandwich was fabulous, healthy, prebiotic and probiotic. I will definitely be making it again!


With veggies we had on hand, some scraps from shooting a how to make summer rolls video, pickles fresh from our oak barrels, some amazing vegan pepper jack cheese, and a bit of my favorite Goddess dressing from Trader Joe's, I surprised myself with the BEST veggie sandwich. A note on the bread we use: We only buy sprouted grain bread, usually I like to get the Ezekiel 4:9 Sesame Sprouted Grain Bread.

I'll definitely make this sandwich more often for lunch, so Scotty can foster his pickle love affair and I can eat more of them. Anyways here is the recipe! 

Ultimate Probiotic Veg Sandwich

Ultimate Probiotic Veggie Sandwich


  • 1 Yellow Squash Sliced
  • 4-5 Small Radishes Sliced
  • Chopped Kale
  • Chopped Red Cabbage
  • 1/2 Red Onion Sliced
  • Vegan Goddess Dressing
  • 1 Avocado Sliced
  • Follow Your Heart Vegan Pepper Jack Cheese
  • Sprouted Grain Bread
  • Cultured Guru Fermented Pickles



  1. Toast your bread slices, and then spread a bit of goddess dressing on both pieces.
  2. Start assembling your sandwich by placing 1-2 slices of Vegan pepper jack cheese ontop the layer of goddess dressing.
  3. Pile on the rest on the ingredients in whatever order you desire. It helps if you slice the ingredients semi-thin, so that they lay flat.
  4. Don't forget to add 4-5 of our Cultured Guru Fermented Pickles for a healthy dose of probiotics!
  5. Place the other slice of bread on top, and cut the sandwich in half.  
  6. Enjoy this Ultimate Veggie Sandwich that's full of flavor and probiotics!
