The Best Multigrain Pumpkin Bread with Streusel Topping

This pumpkin bread is the BEST! (I know, I know) everyone says that but I mean it! This multigrain pumpkin bread is loaded with healthy fiber, it’s low-sugar, and it’s vegan. It only takes about 10 minutes to mix together and one hour to bake.

Ingredients for This Recipe

Here’s the best part about this recipe: you can use the mix of flours I used here, or you just use all purpose. This recipe works with even substitution gluten-free flour mixes too. I like using a mix of flours to bake breads like this for more fiber diversity! The word on the street, is the more types of plants you eat the more robust your microbiome will be. Flour and grains count towards plant diversity in your diet. Here I used an even mix of sprouted rye, organic bread flour, and buckwheat flour. I think the flavor was perfect!

Here’s all the ingredients I you’ll need:

  • salt
  • baking soda
  • corn starch
  • cinnamon
  • nutmeg
  • Rolled oats
  • Bread Flour
  • Rye Flour
  • Buckwheat Flour
  • Plant-Based Milk
  • Vanilla
  • Maple Syrup
  • Ripe Banana
  • Pumpkin Puree
  • Vegetable Oil or Olive Oil
  • Flax Egg (2 tablespoons ground flaxseed mixed with 3 tablespoons water)

The streusel topping is optional, so if you want to make that you will need:

  • Vegan Butter
  • Flour
  • Organic Sugar

Healthy Pumpkin Banana Bread

So this is technically a delicious fusion of a pumpkin bread recipe and a banana bread recipe… and it’s delicious. I’m a fan of using banana in most of my sweeter bread recipes.

How to Make The Best Pumpkin Bread

The key to making this recipe perfectly? Don’t mix this batter too much! If you mix too much the bread will come out too chewy and dense. The only other thing is to definitely use parchment paper to bake this loaf.

Vegan, Low-Sugar Pumpkin Bread Recipe

This recipe does contain sugar, but no cane sugar! I just used a ripe banana and some maple syrup to sweeten this bread recipe. I also used an egg replacement made from flaxseed, making this recipe completely vegan. You can use any egg replacement equaling 2 eggs, or just use eggs if you arent vegan.

Dry Ingredients

  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 tablespoon corn starch
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup rolled oats
  • 1 cup bread flour
  • 1 cup rye flour
  • 1 cup buckwheat flour

Wet Ingredients

  • 1/4 cup plant-based milk
  • 1 teaspoon vanilla
  • 1/2 cup maple syrup
  • 1 ripe banana
  • 2 cups pumpkin puree
  • 1/4 cup vegetable oil or olive oil
  • 2 flax eggs (2 tablespoons ground flaxseed mixed with 3 tablespoons water)

Streusel Topping (optional)

  • 2 tablespoons vegan butter, cold
  • 1 tablespoon flour
  • 2 tablespoons organic sugar

Instructions

  1. Preheat oven to 375 °F
  2. Line a 9 x 11 bread pan with parchment paper
  3. In a mixing bowl, combine all of the wet ingredients.
  4. In a separate bowl, mix all of the dry ingredients until evenly combined.
  5. Gradually fold the dry ingredients into the wet ingredients. Mix until it’s just combined, and do not over mix. 
  6. Scoop the mixture into the parchment paper-lined bread pan, and spread evenly into the pan.
  7. (optional) Combine the ingredients for the streusel topping using a fork. Sprinkle evenly on top of the bread. 
  8. Place loaf in the oven and bake for one hour, rotating halfway through.
  9. Immediately remove from the hot pan, and cool on a cooling rack for one hour before slicing.
