How to Bake the Perfect Sweet Potato

I love baked sweet potatoes. They’re so versatile, so you can incorporate sweet potatoes into savory or sweet dishes for a prebiotic fiber boost. Since they’re loaded with fiber, vitamins, and nutrients they’re the perfect gut-healthy food choice!

Baking sweet potatoes isn’t hard at all, and no you don’t need to wrap the potatoes and waste a bunch of tin foil to bake them.

  1. Preheat your oven to 375 degrees F
  2. Wash your potatoes
  3. Line a baking sheet with parchment paper
  4. Place potatoes on the parchment paper
  5. Using a Knife Poke about 7 holes in the potatoes
  6. Bake for 30 minutes, then flip the potatoes and bake for another 30 minutes

After baking, test and see if they’re done by poking a fork into the potato and trying to lift it. If the potato feels soft and slides right off the fork, it’s done.

Meal Prepping Blueberry Banana Loaded Breakfast Sweet Potatoes

I like to bake a bunch of potatoes at one time and then store them in the fridge for breakfasts throughout the week. If you do this, you just have to microwave the potato and load it with your toppings for breakfast. Super easy, right?

Stuffed Breakfast Sweet Potato Toppings

When I eat sweet potatoes for breakfast, I prefer them more on the sweet side! So that means loading them up with nut butter for protein and healthy fats, fruit for more vitamins and fiber, and usually some homemade vegan yogurt for a probiotic boost!

I always have multiple kinds of nut butter stocked in our pantry. However, my absolute favorite nut/seed butter is sunflower seed butter. It’s very affordable in comparison to other nut butter.
