Kimchi Breakfast Tacos

Kimchi and tofu scramble is one of our favorite pairs of all time! Theres no better breakfast than one packed with vitamins, nutrients and delicious probiotics...and actually no eggs at all! This recipe once included eggs and milk, but we've since changed our lifestyle a bit. We eat a plant based diet and enjoy this vegan version much more. 

Kimchi Breakfast Tacos


  • Corn tortillas
  • 16 oz Organic Sprouted Tofu
  • 1/2 Teaspoon turmeric
  • A pinch of salt and pepper
  • 1 cup of kimchi
  • A few sprigs of purslane



  1. Break up tofu into chunks. Add to a skillet with turmeric, salt and pepper on medium heat and stir until the tofu becomes slightly crispy.
  2. Divided scrambled tofu amongst three or four corn tortillas.
  3. Top with a heap of kimchi and a few purslane leaves.
  4. Feel free to add other things like some avocado slices or spinach.
  5. Fold over tortilla and enjoy!
