How to Bake Sweet Potatoes Perfectly

I love baked sweet potatoes. They’re so versatile, so you can incorporate sweet potatoes into savory or sweet dishes for a prebiotic fiber boost. Since they’re loaded with fiber, vitamins, and nutrients they’re the perfect gut-healthy food choice!

Baking sweet potatoes isn’t hard at all, and no you don’t need to wrap the potatoes and waste a bunch of tin foil to bake them.

  1. Preheat your oven to 375 degrees F
  2. Wash your potatoes
  3. Line a baking sheet with parchment paper
  4. Place potatoes on the parchment paper
  5. Using a Knife Poke about 7 holes in the potatoes
  6. Bake for 30 minutes, then flip the potatoes and bake for another 30 minutes

After baking test and see if they’re done by poking a fork into the potato and trying to lift it. If the potato feels soft and slides right off the fork, it’s done.

Meal Prepping Peanut Butter and Jelly Stuffed Sweet Potatoes

To make these stuffed potatoes even easier and quick for busy mornings, I like to bake a bunch of potatoes at one time and then store them in the fridge for breakfasts throughout the week. If you do this, you just have to microwave the potato and load it with your toppings for breakfast. Prepping the potatoes makes a huge difference on those mornings you’re in a rush!

Stuffed Breakfast Sweet Potato Toppings

When I eat sweet potatoes for breakfast, I prefer them more on the sweet side! So that means loading them up with nut butter for protein and healthy fats, fruit for more vitamins and fiber, and usually some homemade vegan yogurt for a probiotic boost!

I always have multiple kinds of nut butter stocked in our pantry. However, my absolute favorite nut/seed butter is sunflower seed butter. It’s very affordable in comparison to other nut butter.

Peanut Butter and Jelly Stuffed Sweet Potatoes

For this recipe you will need:

  • Baked Sweet Potato
  • Crunchy Peanut Butter (sub for Almond Butter if you can’t do peanuts)
  • Organic Raspberry Jam with Chia Seeds
  • Grapes or raspberries
  • Yogurt Drizzle

Ingredients

Scale
  • 1 Medium Baked Sweet Potato
  • 2 Tablespoons Peanut Butter
  • 1 Tablespoon Chia Seed Jam
  • 1/4 Cup Grapes
  • 1 Tablespoon Granola
  • 1 Tablespoon Vegan Yogurt

Instructions

  1. Using the directions at the beginning of this blog, bake your potato.
  2. Slice the potato in half longways and allow it to cool slightly.
  3. Gather your ingredients.
  4. Stuff the potato with the peanut butter, jam, and grapes. Then top with granola and vegan yogurt.
  5. Enjoy!
